Fried Mutton Pulao Recipe:


Mutton Ingredients:

Mutton Raan (leg) 1.5-2 kg

Water as needed

Salt 1/2 tbsp

Vinegar 1/4 cup

Ginger garlic paste 2 tbsp


Raan Roast Ingredients:

Fuel as needed

Raan included


Raan Marination Ingredients:

1/2 cup yogurt

Water 1/4 cup

Salt to taste

White pepper powder 1 tsp

Turmeric powder 1 tsp

Ginger garlic paste 1 tbsp

Green chili paste 2 tbsp

Cumin powder 1 tsp

Lemon juice 2 tbsp


Steaming Raan Ingredients:

Water as needed

Garlic 3 cloves

Slices of lemon 3

Blue cardamom 4-5

Black card 1

Dried coriander 1 tbsp

Star anise 2

Fennel seeds 1 tbsp



Ingredients of Pulao:

Oil 1/4 cup

Onion (sliced) 1 cup

Ginger garlic paste 1 tbsp

Green chili paste 1 tbsp

Cumin seeds 1 tsp

Star anise 1

Black peppercorn 1 tsp

Fabrics 1/2 tsp

Black card 1

Salt to taste

Red flakes 1 ½ tsp

The mutton contains 3 cups

Wet rice 2 cups


Raan Roast Preparation Guidelines:

1. Take one goat's leg and cut a deep cut into it.

2. In a bowl add water, salt, vinegar, ginger paste ginger, and soak the leg in it for one hour. Squeeze the dry leg and pat it.

3. Heat oil in a large saucepan and fry deep on each side for 4-5 minutes. Remove from the oil and let cool to room temperature.

4. In a bowl add the yogurt, water, salt, white pepper, turmeric, ginger-garlic paste, green chili paste, cumin powder, lemon juice and mix well.

5. Pour the sea mixture over the fried leg and sauté for eight hours or overnight.

6. Wrap the leg in foil paper, punch small holes in the foil, and set them aside.

7. In the steamer add water, garlic, lemon, green cardamom, black cardamom, dried coriander, star anise, fennel seeds, and bring to a boil.

8. When the water starts to boil, put the folded leg in the steamer and cover with a lid and steam for at least two hours.

9. Assemble the folded leg and set it aside.

Directions for Yakhni Pulao Preparation:

10. In a frying pan with oil and add the onions, cook until the onions start to acquire a golden brown color.

11. Add the ginger paste, paste the green chili and cook for 2-3 minutes. Add water if needed.

12. Add cumin seeds, star anise, black peppercorn, cloves, black cardamom, green cardamom, and cook for one minute.

13. Add salt, red pepper and cook for 2 minutes.

14. Add the lamb and bring it to a boil. Add the wet rice until 80% of the water has evaporated. Cover with steam and steam for 10-15 minutes. Serve with Raan Roast.

Cooking time: 2 hrs 30 minutes
Serving: 4-5
